We admit it. Choosing and preparing fish dishes is not easy. You need to be well informed about the type of fish, its fat content, whether it flakes or not and how fresh it is.
But the same rules for choosing beef apply here. Get to know your fish monger. They can be your greatest ally when choosing fish. Some fish tips (mmmm... fish tips):
- Fish should not smell like fish. If it does it is going bad. If anything, fish should smell like the ocean. An unpolluted ocean at high tide.
- The eyes should be clear, almost alive. And the gills should be bright red, still engorged with blood. These are sure signs of freshness. This is why we suggest buying fish whole and having your fish monger filet for you if you can't do it yourself. It will ensure that you are getting the freshest fish.
- If you are purchasing shellfish, they should be alive! Their shells should close when tapped (if they don't , throw it away). If the crustacean has legs, they should be kicking. Lethargy is a bad sign.

Shrimpy Jalapeno Buggers

Stuffed Maine Lobster
