Spicy Fried Onion Rings

The fried ring is the best part of the onion.
Ingredients:
1 cup of flour (borrow it from your cute neighbor)
1/2 tsp. of salt
1/4 tsp. of black pepper
1 tsp. dried oregano flakes
1 tsp. of cajun spice (buy it, you'll use it more than once)
4 large onions
Corn oil for frying
Cut the onions into very thin slices and separate them into rings. Don't touch your eyes (girls like guys who cry at movies, not when they are cooking). Soak the onions in ice water for one hour.
Combine the flour, salt, pepper, oregano, and cajun spice in a large bowl. Heat yer oil in a big ol' pan (try to target 350-375 degrees, no hotter). Remove the onions from the ice water and dry them thoroughly with a paper towel. Dredge them in flour mixture... we won't get too technical, just put them in the flour and make sure they're well coated. Now you know what dredging is!
The oil temperature in your pan will drop when the onions are added, then rise as the onions cook. You need to regulate the heat accordingly. So no Baywatch when making these unless your TV is in the kitchen.
Fry the onions until they are golden brown, probably no loger than 3-4 minutes. Drain on paper towels and season with salt. Serve em up!
